The following are the 8 levels of summons avaliable in Final Fantasy III. Note that Evokers can use Black/White summons, while Summoners and Sage can use the high summons.

White Summons tend to cause status effects, where Black Summons cause damage. High Summons use the creatures signature attack. The occurence of Black and White summons is random.
